ROASTED VEGETABLES

Preheat oven to 400 degrees


-Cut your favorite vegetables into bite-sized pieces. Fresh broccoli, cauliflower, Brussles sprouts, carrots, green beans, squash, sweet potatoes, etc.


-Toss with 1-2 TBSP of your favorite oil (avocado, olive, canola, etc.), garlic, salt and pepper. --Spread in a single layer on a baking sheet.


-Bake for about 15 minutes, stirring halfway through. Add 5-10 more minutes as needed.




SPICY GRILLED SHRIMP SKEWERS

2 t finely chopped scallions


2 clove garlic minced or pressed


¼ t kosher salt


1 t sriracha hot sauce


2 ½ T olive oil or avocado mayo


40 large raw shrimp, shelled and deveined


2 t fresh ground pepper

Preheat grill to medium. In a small bowl, mix scallions, hot sauce, garlic, salt and mayonnaise, stirring well. Using 8 metal skewers, place 5 shrimp on each skewer and sprinkle with pepper. Grill shrimp skewers 6-8 minutes per side. Remove, coat with sauce, and serve warm.




CHICKEN AND KALE CAESAR SALAD 4 servings

¼ c freshly grated Parmesan (optional)


¼ c dairy free plain yogurt


¼ c lemon juice


½ t Worcestershire sauce


3 Tbsp olive oil, divided


1 clove garlic, minced


1 pound boneless, skinless chicken breast


½ t salt


½ t pepper


4 c kale

Dressing: Combine, Parmesan, yogurt, lemon juice, Worcestershire sauce, 2 tablespoon olive oil, and garlic in a food processor and mix well. Heat a medium skillet over medium heat 5 minutes. Season chicken with salt and pepper. Lightly oil the pan with remaining olive oil, coating all surfaces. Place chicken in skillet and cook 6-8 minutes per side or until fully cooked through, then shred. Gather 4 bowls placing 1 c kale in each. Divide chicken between bowls, top with dressing and serve.



BALSAMIC GRILLED STEAK

1 t kosher salt


¼ c balsamic vinegar


1 Tbsp olive oil


1 clove garlic, minced


1 Tbsp rosemary


1 ½ pounds flank steak

In a large resealable plastic bag, combine salt, vinegar, oil, garlic, and rosemary. Add steak and allow to marinate overnight. When ready to cook, lightly oil the grates of a grill and heat to high. Cook steak to desired doneness.
