Egg Roll in a Bowl
December 22, 20211 lb organic ground turkey (or meat of choice)
1 TBSP avocado oil
2 tsp toasted sesame oil (divided)
1 medium yellow onion
2 cloves garlic
5 white mushrooms
1 bag coleslaw or broccoli slaw mix
½ tsp grated ginger
1 TBSP apple cider vinegar
¼ cup Bragg’s liquid aminos or coconut aminos or low sodium soy sauce
Kosher salt
Black pepper
Siracha or sweet chili sauce (optional)
Chopped peanuts or cashews (optional)
Combine avocado oil and 1 tsp of toasted sesame oil in large skillet. When hot, add onion and garlic and cook about 2 minutes. Add the mushrooms and ginger, cook one minute. Add ground turkey and cook until done. Add broccoli slaw mix and stir everything together. Reduce to medium-low heat and cook for about 5 minutes, stirring often. Add the remaining sesame oil, vinegar and liquid aminos/soy sauce and season with salt and pepper to taste. If desired, drizzle with siracha or chili sauce and top with chopped nuts.
